Spicy Bison and Chicken Chili

I just made some chili yesterday and I just love it! I didn’t have a lot of time, so this is a pretty quick and easy recipe!

Ingredients you will need:

1 lb extra lean ground bison
1 lb ground chicken breast
1 can of lower sodium black beans
1 can of red kidney beans
1 can of great white northern beans
1-2 cans of no sodium added stewed tomatos
1 can of of no sodium added diced tomatos
4-5 diced chipotle peppers added for spice
1 whole yellow onion, diced
2 Tbsp olive oil
1 Tbsp Mrs Dash Extra Spicy
1-2 Tbsp Chili powder
1/2 Tbsp cumin
Morton’s Lite Salt to taste ( this is a mix of sodium and potassium, good for those watching sodium intake)
Fresh Cracked black pepper to taste
Red pepper flakes to taste

I start by heating my crock pot up to “high” heat, and putting the Olive Oil, Diced onion, Red pepper flakes, and chipotle chilis in the pot with the lid on for about 10-15 min.  Meanwhile, cook the meat.  I cooked it in a large pan together.  These are pretty lean meats, so there shouldn’t be any fat to drain.  When the meat is done cooking, add all of the rest of the ingredients to the pot: beans, tomatos, spices, etc.  Stir it up, then slowly start folding the meat in.  You can leave the pot on “high” heat for 2-3 hours, or “low” heat for 4 or more hours.
